The Skinny Pancake served its first crepe in 2003 atop a cart made of kitchen floor scraps and a used sailboat trailer. Since then, the business has grown to include restaurants on the Burlington waterfront and in downtown Montpelier. Owners Jonny and Benjy Adler are committed to sourcing their ingredients locally; they were the first vending cart to become part of the Vermont Fresh Network.
